Himalayan Fold is a small kitchen under a railway arch serving momo, thukpa and a dal that regulars order before they sit down. There are twelve stools and no bookings.
The story
Bikash Gurung cooked in other people’s kitchens for eight years. The first week he opened, the momo sold out by 7pm and he had to ring his sister to fold more.
