Nightingale Pho is a 28-cover kitchen on Morning Lane serving north Vietnamese broths, broken rice and iced coffee. Stocks simmer overnight; the herb plates are stacked high; the room smells of star anise by 11am.

The story

Minh Tran learned the family pho from his mother in Hanoi, then spent years cooking in East London pubs before opening a room of his own. The name is a nod to the nightingale hospital that once stood nearby — and to the night shifts that funded the first vat.
